I’ve had great results with briquets, just avoid the ones with built-in lighter fluid. I prefer to cook on charcoal directly in the flames. You won’t even need to do a taste test, you’ll know before the plate even hits the table. I’ve been using the Frontier hardwood lump charcoal from Tractor Supply lately & highly recommend it.
