And don’t sleep on mulberry wood, it gives a great flavor when smoking. I like to combine it with apple wood

It’s freaking cold here! Sunday looks to be high 40’s so will be out cleaning all day. I cannot wait for April to get here. Gonna go after 3 potential clients, but may hit up Cintas earlier as their trucks are dirty and whoever is cleaning them just ain’t getting it done. And I’m going to reengage Amazon, they’ve gone from 50 vans to around 200

Get a charcoal chimney to light your pit. Put 1-2 chimneys of lit charcoal and throw some wood on it. If your temp starts dropping the either put more wood or another chimney. I recommend you get a pork shoulder instead of the chuck roast. The fat in the chuck roast doesn’t render well. Remember: YOU DON’T WANT WHITE BILLOWING SMOKE. Open the pit up if you see this because your fire is choking and will make your meat taste funky

@Donut those wood chunks are dumb dont use them. You want wood that is long and narrow for your fire find a guy who sells wood he probably has hickory ask him if the will double split it for you. Royal oak charcoal in the bottom. Go to harbor freight and get a big torch end they cost 10 bucks but no lighter fluid and you can use it to warm the box quickly( that’s a BBQ trick we can talk about later). Before you cook good meat cover your racks with cheap bacon and let it smoke off for about a hour.

Got a chimney, started it with it… side burner on gas grill worked magically for that purpose…but i didnt add any more, thought wood would be good. And did try yo avoid all the white smoke even with no meat in smoker. I actually found a small pork shoulder at store, 6lb. But i am not going to be home til around lunch time, fogure something 4-5 hour cook will be ready for dinner (and chuck was cheap)

@Firefighter4hire Temp just sky rocketed when i was adding the larger splits so figured id cut them down to play with different sizes. I split them in 1/2 and 1/3s to begin with. Then split more and cut some chucks up. They fit in firebox good and i was putting some smaller peice in the box and off to the side to warm up and shorter their ignition, hoping to avoid all the white smoke.

Dang, bacon would have smelled good, maybe ill do it if i have time before chuck today.

Ill take plenty of pics today when i get started, appreciate yalls advise. Really hoping my iGrill thermometer will be here by the time i start. If not itll def be here during the cook.

Sorry for poor pic, but little piece is about 4”. Slim peice is about 1/2” thick or so

I would split them at least in half. You definitely want to do bacon before you put any meat on try and get a season on the grates

Surprising not bad… if i didnt add drippings it would have been a little dry to the taste. Bark good, wudnt have been mad if it was a little thicker.

Overall very please and made for an absolute awesome sandwich.

Darn, that sounds good. Little mayo and some spicy mustard. I’m drooling. Wifey had some kind of chicken casserole tonite. I’d kill for one of those sandwiches.

Lol, Mayo is what went on there.

Will do rest for sandwiches tomorrow, prolly hit it with a little vinegar based sauce. Lot of work for 5-6 sandwiches but good.

And Chuck Roast was $9 and some change.

To like smoking, you have to enjoy the journey, because it can be a fair amount of work for the amount of food unless you’re doing it for a group. A lot of work to just feed 2-3 people.

Was my view most of afternoon… once Amazon got here with Thermometer i was able to hang out inside the last bit.
