Got a smoker... best place for info

I use all oak in my offset smoker. I look for red oak in particular that has been split for at least 6-8 months. It takes a lot of charcoal to get that thing up to 250 so I usually use it to start the fire. Get a thermometer and build a fire. I like to get it up to about 450-500 and burn it out til it stop smelling like burning paint. Let it burn for a while. If you’re gonna use charcoal, get a chimney. It helps. If you use wood, build a few fires to work on fire management. See how well it burns and what kind of temps youre getting. What ever fuel you use know this: you dont want white billowing smoke coming out of your stack. It means your fire is choking and will make your meat taste funky. You’ll see some smoke when you throw a log on there but not for long. I like to see a heat mirage coming out of my stack with little smoke here and there. It tells me my fire is burning clean and that’s good. A good thing about offset cookers is you can cook a lot of meat with little chance of a grease fire. I always clean out the bottom and build 400 degree fire to burn off anything i missed. Once thats burns down to about 250 the meat goes on. Theres alot of good information on here so far. Clarification: I don’t watch sports that use a ball or puck. I do watch curling with wife but only to keep her company.

God I hate watching sports well tv in general I would much rather turn build something in the shop than watch tv. I have been to a football game but only for bbq and tail gate I could care less about the rest of it. Nothing is worse than a super fan

I dont understand sports at a fundamental level. Its like look the guy in blue has the ball… oh now the guy in red does… wooh, oh look he threw it into a hole…yeah everybody clap and spend lots of money.

that is the same one i got, or atleast what picture on box looks like… CharGriller w/offset box.

Picked it up from moms today as we had the wifes car and all baby stuff with us last night.

The first one i owned last me about 10 years.
Second one left it in GA after moving to NC.
3rd one lasted 2 years.
They dont make them the way they used to

Ideally, 2 years isnt ideal… but if its something i enjoy then ill get a new one. Try and get it put together in between hunting over next few days and hopeful try and smoke something here soon… might be easier said than done though

Stayed home today and got this put together… i will say, not a huge fan of the cast iron grates. Overall seems very simple in concept, not overly impressed with craftsmanship and they didnt include the thermometer.

I am looking forward to using it. What steps should i take to season the thing and get it ready to cook?
