Alternative to sodium hypochlorite?

Just met with the facilities manager at a winery. They have a 130-year-old rock wall building that they use to store tons of barrels filled with wine. There is black mold growing around the bottoms of all the walls. They want to have it cleaned so that they can have it sealed because they pump a little humidity inside the large room to maintain proper climate. Naturally I thought I would go with a 4% mix of sodium hypochlorite with surfactant. He said the bleach is a no go because the fumes could seep into the wine and ruin the flavor/aroma. Is there any other products that can be used to kill mold and clean the surface properly? They tried ozone treatment and were not happy with the results. Attached are some pictures for reference. There is some guy on the Facebook groups pushing his new and improved peroxide solution. Maybe look into that.

That guy is a snake oil salesman. Wash with what you need to wash with, or don’t wash it.

That looks like a fun project if you can figure out an effective cleaning solution.

I’d say ,I’m on it boss and sneak a 2 year old cured country ham in there, Aka (prosciutto). Some honey and stone ground mustard, 6lbs of baby swiss, sharp cheddar, mozzarella, provolone, 4 boxes of Ritz crackers ,sharp knife, Good wine glass and a cork opener and see ya in the morning.
But I’m thinking vinegar to clean

Thanks for the ideas everyone. I’m looking into the vinegar, there is mixed info on it as there are over 100,000 different types or mold and it may only work on some of them. I found a YouTube video with a mold specialist who suggested vitaloxide. Here is the website: https://vitaloxide.com/
It seems legit, and the sds sheet makes it look my 4 year would be safe using it, almost too good to be true! Anyone ever heard of or used this product before? It’s pricy and would have to pass the cost onto the customer for their special needs.

EBC Degreaser

2 years ago, I cleaned a historic land mark (brick) full of black mold and mildew… No SH was permitted. EBC worked just as well

I was thinking HCS 400. But they may not like the fumes as well, definitely not as pungent as SH.

I’m ordering some Monday. Need to have that on hand anyway. I’ve never actually used ebc before but it’s been on my list. I have another degreaser by sunrise environmental called attack that works pretty good but I’m gonna try what everyone else uses, got to work if it’s the standard! Want some one restore too…


They have more that are for food grade. I usually get the HCS 400 , it clings longer and is super hot. I use it for degreasing 5th wheel grease all the way to a bug remover depending on how hot you mix it.

Do you need a full hazmat suit for that hcs400?

Its pretty dang stout man, I mix it with cold soft water to make a 55 gallon drum concentrate mix and dilute the hell outta it from there. and it gets up to well over 100 degrees when I’m finished, it comes in 2 prts, 1 6 gallon pail of liquid and a 6 gallon pail of powder. It stings pretty good when you get it on yourself even diluted at 30,40,50 :1
You can get sample buckets to avoid a 55 gallon drum pack, I think @GeorgeNicholson did it that way at first.

I guy i worked with before uses peroxide, works 100%… it works like sh but man you gotta work twice as hard to get the same results (imho) as it is in granules. We did a mouldy siding and worked perfectly. I can give you the exact product he uses and how he did it if youd like.
