Commercial hardwood deck

One of my clients owns a restaurant with a wood deck. It is made of ipe wood, which is a SUPER dense exotic hardwood. It has been sealed with an oil-based solid stain. There is a lot of foot traffic on the deck, so rubber and grease deposits from waitstaff shoes have started to build up pretty badly. My question is, would using a degreaser affect the stain or the underlying wood?
He is also considering stripping all the current sealant and starting over with a more commercial-grade alternative that would be able to withstand monthly deep cleaning and hopefully last longer than a year or so. Any ideas on this one?

The word ‘exotic’ does it for me. I wouldn’t touch it, but then again I’m only 3 years in.
