Restaurant grease, please help!

Hey guys, hope everyone is doing well, I have a demo tomorrow for a local restaurant , a few days ago I had posted a pic of the area, was wondering if anyone could give me some input on my approach. I’m thinking of hitting it with hot water (around 200 degrees), and a quart of EBC in a gallon of water boosted with 8 ounces of sodium hydroxide applied straight on with a 5-10 min dwell time and slight agitation with a stiff brush. what do you think? should that be effective and leave a noticeable difference?

That’s not bad at all. just put about 5-10 oz per gal of ebc in a pump up - hit it with that - lightly scrub in - let dwell 10 min - hit again with your ds mix, and then with your surface cleaner. Doesn’t need to be that hot 140ish probably plenty
